Photo of the Day – June 1

OMG! It’s June already!? Where has the time gone? So much has happened in the last few months and I will post a baby update, but for now, here’s the photo of the day. These yummy macaroons are made at Bon Ammi in St. Augustine, FL. If you ever visit you need to stop and get some. In my opinion, they are the most similar here in the states as to the ones I had in Paris.

Culinary Art

I have always been a fan of the culinary arts, so much so that I almost went to culinary school instead of college. I consider myself exceptionally blessed to have a husband who cooks well. He’s no master chef and doesn’t know a paring knife from a chef’s knife, but he’s good with guesstimating the right amount of everything to blend together in a well balanced meal.

Enter tonight’s dinner. Latin food inspired by a fast food Mexican restaurant in our area.

He used the following:
1 cup (precooked) White rice
1 handful of Cilantro – diced
1 can Black beans – drained
1 can Yellow corn – drained
1 large tomato – chopped
1 Green bell pepper – chopped
1 Onion – chopped
2 handfuls of Iceberg lettuce – chopped
Shredded Cheese (to sprinkle on top)
2 Chicken breasts – chopped
Jerk seasoning (for the chicken)

He marinated the chicken first. Then he started to cook the rice. He tossed the cilantro in with the rice while it was cooking. He then sautéed the onions and peppers until tender. Then he added the corn and black beans to the onions and peppers. In a separate pan, he fried the chicken in just a touch of olive oil. After everything was done cooking, he put the rice on the plates, added the chicken and sautéed vegetables, sprinkled some cheese (we used a Mexican blend) on top, then topped it off with the fresh tomato and lettuce. We wanted to add some avocado, but the store didn’t have any that were ripe. You could also add black olives and sour cream if you like, but I don’t particularly care for the taste of those.

In the end, we had chips and salsa on the side to complete our Latin dinner. It was so good, the baby was even jumping with excitement as I chowed down. Hope you enjoy it just as much if you try your hand at making it.
